With regards to setting up the VPN on the Mac, this link here as detailed instructions, scroll down to "How to Connect Your Mac via VPN" For this type of situation I would suggest using a program like TeamViewer or LogMeIn, as it will allow remote access to the Mac regardless of it's VPN connection. The problem may come around where the Mac fails to connect to the VPN and you are called for support but will be unable to access the Mac. You will need to enable VNC access on the Mac in System Preferences > Sharing > Remote Management > Computer Settings > tick "VNC viewers may control screen with password". If the Mac is going to be on the VPN with a statically assigned IP then you should be able to use a version of VNC such as RealVNC or TightVNC installed on your Windows computer and connect directly to the Mac via the IP address.
